SHREVEPORT, La. (Ark-La-Tex Weekend) - Big Nate’s BBQ & More is one of the newest barbecue joints in the area. Nathaniel Cosby, III opened up his dream at the Milam Street Kitchen Incubator/Community Kitchen
Chef Cosby says, “Predominantly we sell barbecue but we can go all the way off the hinge.” The “More” includes Cajun, Soul Food, New Orleans cuisine. Two of the biggest draw is the ribs and brisket. He describes the ribs as “fall off the bone, full of flavor, cooked to perfection so it’s just a great bite.” He uses oak wood, a sustainable resource from Frierson, La for his pit. The oak lends a flavor that reminds him of home. Some of the sides he’s proud of are the potato salad, beans and macaroni and cheese.

The inspiration to start cooking came to Chef Cosby from his grandmother. After working several years in the oil field, he decided to become an entrepreneur. Barbecue and Cajun is in his roots. He watched his family, including his grandma, do their thing around the grill.
Don’t miss the signature sandwich: The Big Nasty. “It’s nasty good!” A nice sized hamburger patty, pulled pork, smoked sausage, barbecue sauce and cole slaw. Needless to say this is a messy sandwich so pack plenty of napkins.

On the dessert front, Chef Cosby serves a sweet potato, pecan, lemon or a new purple sweet potato pies in regular sizes and smaller, individual pies. Keep your eyes open for peach cobbler and peanut butter cakes.

As of June 30, Big Nate’s BBQ & More is open Tuesday through Friday from 2 p.m. - 7 p.m. Find him at MS Kick at 1210 Milam Street in Shreveport. He also will bring the pit out for catering events.
